Crock Pot Potato Soup

I know Sizza posted a Baked Potato Soup previously, and while that is absolutely delicious, for those of us being calorie-conscious (even if it's against our will!) here's a delicious alternative that is simple and low in fat and calories.




8 cups diced potatoes (I used about 6-8 potatoes)
1/2 cup chopped onion
3 cans (14.5 oz each) chicken broth
1 can reduced fat condensed cream of chicken soup
1/4 tsp pepper
1 package (8 oz) reduced fat cream cheese, cubed
Optional:
Well-done bacon
Chopped fresh chives

In crock-pot, combine first five ingredients.  Stir gently with wooden spoon to mix ingredients.  Cook on LOW approximately 10 hours or HIGH approximately 5 hours (until potatoes are tender).  Turn off heat, add cubed cream cheese, and continue to stir until cheese is melted and blended well. When serving, top with bacon and chives. (Mr. Luau ate his with oyster crackers, which was delish too!)

Nutritional information, prepared with reduced fat cream of chicken soup and reduced fat cream cheese, no bacon, 1 cup serving:
148 calories
4 g fat (2 g saturated fat)
13 mg cholesterol
655 mg sodium
22 g carbohydrate
2 g fiber
6 g protein
